There are a lot of cafes, but I liked to (irish) pubs the most, there is always a nice atmosphere. There are not only students going out, but you will find a lot of older people in while going out.

Place Sant Pierre by the river is really nice and cheap, Bodega, the Frog and Rosbif is an English pub, there are loads and loads of decent restaurants too.

bar basque, bar le st pierre all of place st pierre excellent as well as Bodega Bodega, The Frog and Zoodrome. Toulouse night life is excellent.
